How can I make my products show up in the order I want (by size, stocking date, etc)?

You have several options of the order for displaying your items.
Login to your storeadmin then click "Catalog Setup" and you'll see a
drop down labeled "Product Order" with these choices:
A to Z
Z to A
Catalog #
Units
Keywords
Oldest to Newest
Newest to Oldest
Random
